Quick Poached Fruit

    A very quick and delicious fruit dessert to throw together - apricots, apple and rhubarb are poached in orange syrup and served with yoghurt.

    Ingredients
    Serves: 2 

    • 1 cup orange juice
    • 1/2 cup water
    • 3/4 cup sugar
    • 1 orange, zested
    • 100g dried apricots
    • 1 granny smith apple, peeled and sliced
    • 3 stalks rhubarb, cut into 4cm lengths
    • yoghurt
    • flaked almonds, to garnish

    1. Place the orange juice, water, sugar and orange zest in a saucepan and bring to the boil, stirring until the sugar dissolves. Add the dried apricots and simmer 5 minutes, until softened.
    2. Add sliced apple and rhubarb and simmer very gently for 5 minutes until the fruit is just tender.
    3. Divide the fruit into bowls, top with the syrup and add yoghurt and almonds to taste.
