    This is a potato and parsnip side dish where they are thinly sliced and braised in stock until it is absorbed.

    Serves: 6 

    • 1 tablespoon butter
    • 5-6 potatoes, washed and thinly sliced
    • 3-4 parsnips, peeled and thinly sliced
    • 2 onions, peeled and thinly sliced
    • 3 tablespoons fresh oregano, chopped
    • salt and pepper
    • 3 cups vegetable stock
    • 3 tablespoons olive oil

    1. Preheat oven to 190 degrees C. Grease a 20x30cm deep baking tray with the butter.
    2. Layer potatoes and parsnips in the pan, alternating with onion and oregano. Add salt and pepper between layers. Press vegies down firmly and pour over the stock. Drizzle with olive oil.
    3. Bake 1 1/2 hours until top is golden brown and vegetables are tender.
