Couscous is usually served as a savoury side grain or in tabbouleh but here it is a sweet and fragrant dessert which is topped with honey and yoghurt.

Serves: 4 

  • 1 cup couscous
  • 1 cup orange juice
  • 1/4 teaspoon saffron threads
  • 3 tablespoons honey
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange flour water (optional)
  • 25g butter
  • 1/2 dried figs, halved
  • 1/2 cup pistachio
  • extra honey and yoghurt

  1. Place couscous in a bowl. Place orange juice in a saucepan and bring to the boil. Add saffron and honey to juice and stir gently to dissolve. Add cinnamon, orange flower water and butter. When butter melts, pour liquid over couscous and cover with plastic wrap. Set aside and steam for 10 minutes.
  2. Fluff up couscous with a fork, stir through figs and pistachios and serve with yoghurt and extra honey.
