Place couscous in a bowl. Place orange juice in a saucepan and bring to the boil. Add saffron and honey to juice and stir gently to dissolve. Add cinnamon, orange flower water and butter. When butter melts, pour liquid over couscous and cover with plastic wrap. Set aside and steam for 10 minutes.
Fluff up couscous with a fork, stir through figs and pistachios and serve with yoghurt and extra honey.
