An unusual but delicious turkey breast recipe where turkey is stuffed with chestnuts and preserved lemon and baked in banana leaves.

Serves: 4 

  • 1 cup chestnuts, peeled and crushed
  • 1/2 cup preserved lemon rind, finely chopped
  • 50g butter, softened
  • freshly ground black pepper and sea salt to taste
  • 1 large turkey breast (2 kg), skin on
  • 40g butter, softened, extra
  • 2 large banana leaves

  1. Preheat oven to 220 degrees C.
  2. Combine the chestnuts, preserved lemon and butter and season to taste. Peel back a little of the skin of the turkey breast to make a pocket big enough for you to smear the chestnut stuffing over the meat. Cover the stuffing with the skin again and tie with kitchen string to secure.
  3. Bake in the oven 30 minutes.
  4. Turn the oven down to 180 degrees C. Smear extra butter over the turkey breast, season with salt and pepper and wrap in banana leaves, securing with string. Return to the oven and bake a further 15 minutes.
