Balinese Black Rice Pudding

    For a taste of the tropics try this black rice pudding. Pandan leaves, glutinous rice and palm sugar are all available in Asian markets.

    Serves: 5 

    • 1 cup black rice
    • 3/4 cup white glutinous rice
    • 2 pandan leaves
    • 1/4 teaspoon sea salt
    • 5 cups water
    • 1/4 cup palm sugar
    • 1/4 cup water
    • 1 (400ml) tin coconut cream
    • fresh seasonal fruit (bananas, mangoes, raspberries...)

    1. Combine the black and white rices and rinse in a bowl to remove most of the starch. Place the rice, pandan leaves, salt and water in a heavy pot. Bring to the boil and simmer.
    2. Grate the palm sugar and add to the water. Simmer until the sugar dissolves (about 5 minutes).
    3. When the rice has been cooking 30 minutes, add the syrup and cook another 10 minutes.
    4. Serve warm with coconut cream and fresh fruit.
