This is a basic recipe for cooking pork belly Chinese style. You can eat as is with some hoisin sauce for dipping, serve it as a meal with rice and steamed greens, or use it in stir fries and hotpots.

Serves: 4 

  • 1 kg piece pork belly
  • 3 teaspoons salt
  • 2 teaspoons five-spice powder

  1. Was and dry the pork belly and score the skin at 1cm intervals.
  2. Combine the salt and five-spice and rub it all over the meat. Set aside in the fridge for at least 2 hours.
  3. Heat the oven to very hot, 230 degrees C. Place a sheet of foil on a baking tray, put a rack on top of that, and put the pork on the rack, skin side up. Roast 20 minutes.
  4. Reduce heat to 200 degrees C and roast 40 more minutes until the skin is crackly and crispy. You can finish it under the grill if necessary but don't let it blister too much.
  5. Cut the pork into thin slices and use as needed.
