In Italy, pizzas are usually quite small and simply dressed, one per person. Here's a classic mix of flavours with a bit of a kick from chilli flakes.

Makes: 8 small pizzas

  • For the dough
  • ` 4 cups (500g) flour
  • 1 tablespoon salt
  • 2 teaspoons dried yeast
  • 350ml water
  • 2 tablespoons olive oil
  • For the topping for each pizza
  • 1/2 cup chopped fresh tomatoes
  • 2 bocconcini, sliced
  • 2 basil leaves
  • 2 anchovies, chopped
  • chilli flakes, to taste
  • drizzle olive oil

Preparation:30min  ›  Cook:20min  ›  Ready in:50min 

  1. Preheat oven to 220 degrees C.
  2. Mix all the dough ingredients in a bowl then knead 10 minutes. Rest the dough for 10 minutes then stretch out into small pizzas (these quantities will make about 8 small pizzas).
  3. Spread the chopped tomato, bocconcini, basil and anchovies on each pizza. Sprinkle chilli flakes on top and drizzle with olive oil. Bake for 15-20 minutes.
