Homemade tomato soup is so much better than the tinned stuff and nothing could be easier to make. You can peel the tomatoes if you like but I don't find it necessary.
Heat the olive oil in a large saucepan. Saute the onion, carrot and garlic, stirring occasionally, for five minutes.
Add the quartered ripe tomatoes and cook 4 minutes. Add the tin of chopped tomatoes, the chicken stock and water. Bring to the boil, reduce heat and simmer 30 minutes.
Remove from heat and allow to cool a little. Puree the soup in a blender or with a hand held blender. Season with salt and pepper. Reheat if necessary and serve hot, garnished with chopped basil.
