Hot and Sour Noodles

    Hot and sour soup is great for when you are feeling under the weather, it always perks me right up. So flavourful!

    Serves: 4 

    • 250g glass vermicelli noodles
    • 4 cups (1 litre) vegetable or chicken stock
    • 2 stalks lemongrass, peeled and crushed
    • 2 tablespoons grated ginger
    • 2/3 tablespoon fish sauce
    • 3 skinless chicken breasts, thinly sliced
    • 1 bunch baby bok choy, chopped
    • 3 spring onions, sliced
    • 1/2 red chilli, seeded and chopped
    • 4 tablespoons fresh lime juice
    • 3 tablespoons fresh coriander, chopped

    1. Soak noodles in warm water 5 minutes to soften, then drain.
    2. Place stock, lemongrass and ginger into a saucepan and bring to a simmer. Simmer for 5 minutes then strain. Return the stock to the pan and add fish sauce to taste.
    3. Add the chicken and bok choy and simmer 3 minutes or until chicken is cooked. Add spring onion, chilli, lime juice and coriander. Finally add the noodles, heat through and serve.
