Spanish Almond and Grape Soup (Ajoblanco)

    This smooth savoury soup, from the region of Andalusia in Spain, is made with almonds, garlic and red wine vinegar. It is traditionally served with green grapes.

    Serves: 4 

    • 500g blanched almonds
    • 1 clove garlic, diced
    • 100ml olive oil
    • 50ml red wine vinegar
    • salt, to taste
    • chilled water
    • 1 handful peeled green grapes

    1. In a large bowl or jug, combine the almonds, garlic, olive oil, vinegar, salt and some water. Using an immersion blender, puree the mixture until creamy.
    2. Keep adding cold water while blending until your desired consistency is reached. The soup should be thick but pourable. Serve chilled garnished with the grapes.
