One Bowl Chocolate Cake

    A beautiful layer cake with a whipped cream filling, so quick and easy to prepare in one bowl. This is very moist and chocolately.

    Makes: 1 cake

    • 1 1/2 cups self raising flour
    • 1/2 cup Dutch cocoa powder
    • 1 1/2 teaspoons bicarb soda
    • 1 1/4 cups caster sugar
    • 180g unsalted butter, melted
    • 1 cup buttermilk
    • 2 eggs
    • 1/2 teaspoon vanilla essence
    • 300ml cream, whipped

    1. Preheat oven to 180 degrees C. Grease and line the bottom of two 20cm round cake tins.
    2. Sift flour, cocoa, bicarb soda and sugar into a large bowl. Make a well in the centre and pour in the melted butter. Mix five minutes with an electric beater, or until thick and creamy.
    3. Pour in 1/2 cup buttermilk and mix to combine. Add the eggs one at a time, beating well. Add the remaining milk and vanilla, stirring to combine.
    4. Divide the cake batter between the two tins. Bake for 35 minutes or until they test done. Cool ten minutes then invert on a cake rack so they don't get soggy.
    5. Trim the top of one cake and spread with whipped cream. Top with the other cake. Dust with icing sugar.
