Beetroot Hummus Dip

    This hummus recipe is a little different - it adds beetroot for an amazing flavour and colour. I like to serve this with my sweet potato chips for dipping.

    Serves: 4 

    • 4 beetroot
    • 1 1/2 cups cooked chickpeas
    • 3 tablespoons tahini
    • 1/2 cup olive oil
    • 1/4 cup water
    • 1/2 teaspoon ground cumin
    • 2 cloves garlic, crushed
    • 2 tablespoons lemon juice

    Preparation:10min  ›  Cook:45min  ›  Ready in:55min 

    1. Simmer beetroot in a saucepan of water 45 minutes or until they test tender. Drain, cool and peel.
    2. In a food processor, finely chop beetroot, chickpeas and tahini. Add olive oil, water, cumin, garlic and lemon juice. Process until smooth and thick.
