Chicken, Bacon, Avocado Open Sandwich

    A beautiful easy recipe that is perfect for a quick summer lunch! Delicious presentation!

    Serves: 2 

    • 1 large egg
    • 2 chicken breasts
    • breadcrumbs
    • 1/3 cup oil
    • one large bread roll, cut in half
    • rocket salad mix
    • 1 avocado, mashed to a paste
    • 2 precooked bacon strips
    • tomato
    • onion
    • salt and pepper to season

    1. First, prepare your chicken. Take your egg and crack it in a bowl. Beat it lightly.
    2. Dip your chicken in the egg making sure it is nicely coated. Place your breadcrumbs in a large bowl.
    3. Gently toss the chicken making sure it is entirely covered in the crumbs.
    4. Preheat a skillet or fryer using 1/3 cup of oil. Fry the chicken until golden brown and chicken is cooked all the way through. Season with a bit of salt and set aside.
    5. Dump the excess oil leaving the skillet lightly greased. Place both halves of the bread rolls onto the skillet. Allow to toast lightly on both sides.
    6. Place the toasted bread rolls on your plate. Top with salad mix, chicken, avocado paste, bacon, tomato and onion.
    7. Season with a bit of pepper, and serve!
