Pumpkin Hummus

    This is a hummus with a bit of a difference adding pumpkin to the spicy mix, goes great with vegetables and bread sticks.

    Serves: 8 

    • 1 (400g) tin chickpeas, drained and rinsed
    • 1 clove garlic
    • 1 cup cooked and mashed pumpkin
    • 1 tablespoon tahini
    • 1/2 teaspoon cumin
    • salt and pepper, to taste
    • 1 fresh lime, juiced
    • 1 tablespoon olive oil

    1. In a food processor or blender, add the chickpeas and garlic and puree until smooth.
    2. Add the pumpkin, tahini and cumin, blend to combine.
    3. Add the lime and olive oil monitoring the thickness of the hummus to your preferred consistency.
