Wholemeal Banana, Honey, Prune and Nut Muffins!

    These beautiful muffins are absolutely delicious and full of flavour, they also have the added bonus of being high in fibre. makes 12 muffins

    Makes: 12 muffins

    • 3 cups wholemeal self raising flour
    • 1 1/4 cups of milk/soy milk
    • 1 egg, lightly beaten
    • 90g melted butter
    • 1/2 cup firmly packed brown sugar
    • 2 ripe bananas, peeled and mashed
    • 1 tablespoon manuka honey/regular honey
    • 1 teaspoon linseeds
    • 1 teaspoon chopped walnuts
    • handful of chopped almonds
    • 3/4 cup chopped dried prunes

    1. Preheat oven to 180 degrees C. Lightly grease a 12 hole 1/3 capacity non stick muffin pan.
    2. Sift flour into a mixing bowl. Add brown sugar and stir. Create a well in the centre. Combine egg, milk, butter, mashed bananas and honey in a jug. Pour into the well. Mix well but don't over mix. Add all nuts and prunes to the mix and combine them into the mixture.
    3. Spoon mixture into the muffin holes until 3/4 full. Bake for 20 mins or until a skewer comes out clean.
    4. Cut in half and spread with butter, cream cheese, or ricotta cheese and a drizzle of honey to serve.


    Manuka honey can be found in the health section of your supermarket, but it does not need to be manuka honey.
