Black Sticky Rice Pudding

This is what they eat for breakfast in Bali. It's very easy to make but there's a long slow simmering time and you have to soak the rice ahead.

Serves: 4 

  • 1 1/2 cups (300g) black rice
  • 4 cups (1 litre) water
  • 3/4 palm sugar or brown sugar
  • shredded coconut to garnish

Preparation:5min  ›  Cook:1hour  ›  Extra time:8hours soaking  ›  Ready in:9hours5min 

  1. Soak the rice for a few hours or overnight. Rinse well then place in a saucepan with the water. Bring to the boil and simmer 40 minutes, uncovered, then add the sugar and simmer another 20 minutes or until soft. Garnish with shredded coconut.
