Hearty Beef Casserole with Mash

    Serves: 4 

    • 2 tablespoons plain flour
    • 2 teaspoons vegetable oil
    • 500g lean chuck steak
    • 1 large onion, sliced
    • 1 tablespoon vegetable oil
    • 1 packet Continental® Beef Stroganoff Recipe Base
    • 2 medium potatoes, peeled, cubed
    • 2 cups sliced mushrooms, Swiss brown or button
    • 1 large carrot, peeled and sliced
    • 1 1/4 cups water
    • 1 (425g) tin crushed tomatoes

    1. Preheat oven to 180 degrees C.
    2. Evenly coat beef in flour. In a heavy pan, heat oil and fry onions until softened. Add beef and cook until well browned.
    3. Place beef and onions in an ovenproof casserole dish, with mushrooms, potatoes, Continental® Beef Stroganoff Recipe Base, water, carrots and tomato.
    4. Place in oven and cook uncovered for 1 hour, or until beef is tender.
    5. Serve warm with mashed potatoes, steamed fresh greens and crusty bread.
