Balsamic Strawberry Jam

    A little balsamic vinegar balances out the sweetness of the strawberries in this delicious homemade jam.

    Makes: 2 jars

    • 500g strawberries, hulled and sliced
    • 400g granulated sugar
    • 1/2 cup (120ml) balsamic vinegar
    • a few thyme sprigs

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. In a saucepan over medium heat, add the sugar and vinegar and bring to the boil. Allow to cook till the sugar is dissolved.
    2. Add the strawberries and thyme to the sugar mixture. Bring to the boil, then reduce to a simmer. Cook for 15 to 20 minutes.
    3. Remove thyme sprigs. Allow jam to cool and store in the fridge in an airtight container, or transfer hot jam to sterilised jars and seal.

    This is a delicious alternative to the very sweet strawberry jam. I sometimes put balsamic and sugar over fresh strawberries so I thought I would give this recipe a go. We just loved it. I didn't put in the thyme leaves in though but added a piece of lemon zest while it was cooking and took it out before bottling.  -  07 Nov 2016
