This is one recipe that I make often. It is very easy and does not take a lot of time to pull together - but it tastes great.
1 can red kidney beans (can substitute with black or cannellini beans)
1 can diced tomatos
2-3 cloves of garlic
1 onion (medium to large sized)
chili powder (1 teaspoon or to taste)
1 tablespoon olive oil
- Dice onion and garlic.
- Heat oil in saucepan.
- Cook onion and garlic for 2 minutes.
- Drain and rinse red kidney beans.
- Add red kidney beans to saucepan. Stir.
- Add diced tomato. Stir.
- Add chili powder. Stir.
- Cook for about 20 minutes. Stir pot regularly.
Very versatile dish. Can be served with rice, pasta or works well as the filling in a toasted sandwich.
