Cabbage Cups

    A quick, easy and healthy meal that my kids love, something I made up with what was in the fridge.

    Serves: 4 

    • 500g trim mince, beef or pork
    • 1 onion, chopped finely
    • 2 cloves garlic, crushed
    • sesame oil, dash
    • 1 grated carrot
    • 1 grated zucchini
    • 1 teaspoon each of thyme, oregano
    • sprinkle of salt and pepper
    • cabbage leaves (enough for how many people are eating, say 2 - 3 each)
    • avocado, mashed with lemon juice and salt and pepper, and a touch of sweet chilli sauce
    • sour cream
    • soy sauce
    • one tin of tomato pasta sauce, or chopped tomatoes
    • grated cheese

    1. Warm the oil and brown off mince, add onion and garlic to soften.
    2. Add tin of tomatoes and soy sauce, along with the herbs and vegetables, mix and let cook on low to medium heat for 20 minutes.
    3. Meanwhile, prepare avocado. Mash and squirt in lemon juice and chilli sauce to taste, add salt and pepper. Mix well cover and put aside.
    4. Wash and dry cabbage leaves and arrange on each place. Cut out the hard stalk pieces.
    5. Once mince is cooked, spoon into cabbage cup, add a sprinkle of cheese, a dollop of sour cream and and splodge of avocado. Enjoy!
