Cold Melon Soup

    A kind of green gazpacho, great for a hot summer evening.

    Serves: 4 

    • 2 cups honeydew melon - seeded, peeled and diced
    • 1 cup cucumber - seeded, peeled and diced
    • 1 avocado, flesh only
    • 1 clove of garlic, crushed
    • 1/4 cup apple cider vinegar
    • 1 tablespoon of lime juice
    • salt and pepper to taste

    Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. Place all the ingredients in a blender. Blend until smooth.
    2. Adjust seasonings to taste.
    3. Chill for about an hour before serving.


    Nice entree, could be a bit much on its own. Toasted pita bread makes a nice accompaniment.
