Potato, Cheese and Sweet Chilli Soup

This recipe was given to me years ago by a good friend, has a good bite and is yummy!

Ingredients
Serves: 4
- 4 medium sized potatoes
- 3 cups water
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 1/2 cups finely chopped onions
- 1 teaspoon dried basil
- 1 teaspoon cumin
- 2 cloves garlic
- 1 tablespoon black pepper
- 1/3rd bottle Trident sweet chilli sauce
- 3/4 cup thickened cream
- 1 cup milk
- 1/2 cup matured cheese

Ready in:1hour10min
- Chop potatoes and simmer until tender.
- Add milk, cream, chilli sauce and pepper.
- Simmer 10 mins then puree.
- Fry onion until light brown.
- Add cumin and basil and cook 10 mins.
- Add potato to mixture.
- Bring to boil.
- Add cheese and stir well.
