Seafood Linguine

    This is a tasty seafood linguine which is cooked very quickly so you don't lose the fine flavours of the mussels, prawns and scallops.

    Serves: 4 

    • 500g linguine
    • 400ml olive oil
    • 16 mussels, cleaned and debearded
    • 4 king prawns
    • 2 cloves garlic, sliced
    • 2 small chillies, sliced
    • 3 cups hot chicken stock
    • 16 small scallops
    • 1 bunch flat-leaf parsley, chopped
    • salt and pepper to taste

    1. Cook the pasta in salted water. About five minutes before it is ready, start the sauce. Heat the olive oil, add the mussels and prawns. When the mussels open add the garlic and chilli and cook for one minutes.
    2. Add the hot chicken stock and cook for three minutes. Add the scallops. In the last few seconds, add the parsley. Season with salt and pepper and mix the pasta through. Serve.
