Tasty Thai-ish Curry

    This recipe can be used with any meat (maybe even fake ones but we don't go there :) . It is good for fresh or left overs and can have many additions to suit your taste, potatoes for bulk, fruit for sweetness.

    Serves: 4 

    • 500g meat cubed
    • 1 tablespoon Thai red curry paste
    • 1 tin coconut cream
    • 1 tin chopped tomatoes (or 3-4 fresh chopped tomatoes)
    • possible extras - potato, pineapple, apple, sultanas

    Preparation:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Brown the meat.
    2. Add the curry paste and fry lightly.
    3. Add the coconut cream, tomatoes and any extras you wish.
    4. Simmer until the meat is cooked and the sauce is thick.
    5. Serve on or with rice.
