Elotes Con Chili - Mexican Corn Cups

    Elotes are a staple in Mexican street food -- served on the cob, in a cup, topped with various toppings like chili powder, cheese, butter, sour cream, seasoned salt, lemon pepper or whatever you like.

    Serves: 2 

    • 2 ears corn, husked and kernaled
    • 2 tablespoons melted butter or olive oil
    • 1 teaspoon dried chili flakes
    • 1/4 cup crumbed feta or queso fresco (if you can get it)
    • 2 limes, one squeezed and one cut into wedges
    • handful of chopped coriander

    1. Preheat bbq grill or oven grill.
    2. Brush corn with melted butter and cook until chargrilled.
    3. In a small bowl mix lime juice, chili flakes and cheese together.
    4. Add the corn and stir well, add in the coriander and garnish with a fresh lime wedge.
