Combine the marinade ingredients and pour over the chicken and mix well. Let marinate 1 hour.
Put the rice in a heavy casserole with a lid, add the stock, cover and cook over low heat 20 minutes.
Spread the marinated chicken over the top of the rice. Add the sausage, shiitake mushrooms and minced ginger. Cover and cook 15 more minutes until rice and chicken are cooked.
