Croissant Bread Pudding

Got any leftover stale croissants? This is a lovely bread pudding with dried fruit, raisins, spice and a touch of orange. Serve with ice cream.

Serves: 4 

  • 4 leftover croissants, torn up
  • 1/2 dried fruit (apple, pear, etc), diced
  • 1/2 cup raisins
  • 4 eggs
  • 1/2 cup (110g) castor sugar
  • 500ml milk
  • 1 teaspoon mixed spice
  • juice and zest of one orange
  • 2 tablespoons flaked almonds
  • 20g butter, diced

  1. Preheat oven to 180 degrees C. Grease a 20cm round deep-sided dish.
  2. Place the torn up croissants in the dish and scatter with dried fruit.
  3. Beat the eggs and sugar together until pale and creamy.
  4. Heat the milk until almost boiling and pour gradually into the egg mixture, stirring constantly. Add the mixed spice and juice and zest of the orange and mix to combine.
  5. Pour the custard over the croissants and sprinkle with flaked almonds. Scatter over the diced butter. Bake for 35 minutes.
