Sweet and Sour Vegetarian Meatballs

    A friend shared this with me when went to her place for snacks - I decided to make it into a main course - the family love it.

    Serves: 4 

    • Meatballs
    • 4 eggs
    • 2 cups of shredded cheddar cheese
    • 1 finely chopped onion
    • 1 cup finely chopped nuts (cashews or pecans or peanuts)
    • 1 cup almond flour
    • 1 tablespoon chopped up basil
    • 1 1/2 teaspoon salt
    • Sweet and Sour Sauce
    • 1/4 cup olive oil
    • 1/4 cup white vinegar
    • 3/4 cup apricot jam
    • 1 cup of tomato sauce (or bolognese sauce)
    • 1/2 finely chopped onion
    • 1 tablespoon peri peri sauce

    1. Preheat oven to 180 degrees C.
    2. In a large bowl, mix together the eggs, cheddar cheese, chopped nuts, almond flour, basil and salt. Form the mixture into 5cm (2 inch) balls and place them in a large baking dish (approx 20cm x 30cm).
    3. In another bowl mix together all ingredients for the Sweet and Sour Sauce. Pour over the vegetarian meatballs.
    4. Bake uncovered for 35 to 40 minutes in oven, until meatballs are firm and sauce is thick and bubbly.
    5. Serve with salad and rice.
