    A low fat and refreshing dressing based on Greek yoghurt, lemon juice, Dijon mustard and chives. Great with potato salad or just green salad.

    Serves: 8 

    • 200g tub low-fat Greek yoghurt
    • 1 tablespoon lemon juice
    • 1 teaspoon Dijon mustard
    • 1/4 cup finely chopped fresh flat-leaf parsley
    • 1/4 cup finely chopped fresh chives

    1. Whisk together yoghurt and juice in a medium bowl until smooth. Stir in mustard, parsley and chives. Refrigerate until ready to serve.

    Yum. I used 1 tsp of minced garlic instead of chives because I didn't have any and it was still delicious. I served it with potato and red onion. It made a lovely, healthy potato salad. - 19 Mar 2015
