Clafoutis is a French dessert of fruit baked in a simple batter. It is very easy to make and quite elegant as dessert. Serve with whipped cream.

Serves: 4 

  • 3 cooking apples, peeled and cut into eighths
  • butter
  • 3 eggs
  • 3 tablespoons sugar
  • 3 tablespoons flour
  • 250ml cream
  • 2 tablespoons apple brandy
  • icing sugar, for dusting

  1. Saute the apples in some butter until they are about half cooked, not too soft. Transfer to a buttered and floured shallow baking dish.
  2. Make the batter: beat the eggs and sugar together while gradually adding the flour and cream. Finally add the brandy. Strain the batter over the apples.
  3. Bake in a moderate oven for 20-30 minutes. Let cool to room temperature and dust with icing sugar.
