Clafoutis is a French dessert of fruit baked in a simple batter. It is very easy to make and quite elegant as dessert. Serve with whipped cream.
3 cooking apples, peeled and cut into eighths
3 tablespoons sugar
3 tablespoons flour
2 tablespoons apple brandy
icing sugar, for dusting
- Saute the apples in some butter until they are about half cooked, not too soft. Transfer to a buttered and floured shallow baking dish.
- Make the batter: beat the eggs and sugar together while gradually adding the flour and cream. Finally add the brandy. Strain the batter over the apples.
- Bake in a moderate oven for 20-30 minutes. Let cool to room temperature and dust with icing sugar.
I added a shake of ground cinnamon and one of ground nutmeg to the apples once cooked, before pouring over the batter. Any opinions on eating hot or cold?
