Heat a large saucepan then add a dash of oil and the mince. Stir until almost brown then add the onion and garlic. When the onion starts to soften add the carrot, celery, zucchini and capsicum. Stir until these vegetables are almost cooked.
Add the jar of pasta sauce, stir in then let simmer as you cook your pasta of choice. If the jar doesn’t seem to have enough moisture rinse the jar out with some water and tip into the sauce. Serve on the pasta with grated cheese.
