Rich Man’s Damper

    The origins of damper are from a poor settler's simple combination of flour and water cooked in the coals of a fire. As times progressed, people became richer and items like butter and milk became more accessible thus damper grew into a recipe like the one below.

    Makes: 1 Damper

    • 3 1/2 cups self raising flour
    • 1/2 teaspoon salt
    • 2 teaspoons caster sugar
    • 40g unsalted butter
    • 1/2 cup milk
    • 1 1/4 cups water

    1. Combine the flour, salt and sugar in a bowl, then rub in the butter.
    2. Stir in the milk and water to create a sticky dough, then knead gently until smooth.
    3. Place on a greased oven tray and bake in an oven preheated to 180 degrees C for 45 minutes, cool on a wire rack.
