Spinach and Fetta Pizza

    If you are looking for a pizza that deviates from the typical toppings this is a simple pizza with great flavour that uses a few easy to get ingredients.

    Makes: 1 pizza

    • premade unsauced pizza base
    • Pasta Sauce
    • 1 tablespoon olive oil
    • 1 onion, finely diced
    • 2 cloves garlic, crushed
    • 1 (400g) tin crushed tomatoes
    • 1/2 cup tomato paste
    • 1/4 cup diced basil
    • 1 teaspoon sugar
    • Topping
    • 500g spinach
    • 200g fetta, crumbled
    • 10 cherry tomatoes, halved
    • 1/3 cup grated Parmesan cheese

    1. Pasta Sauce Heat oil and gently saute the onion and garlic. Stir in the tinned tomatoes, tomato paste, basil and sugar then simmer for 5 minutes or until thickened.
    2. Topping Blanch the spinach until wilted then drain and dice. Spread the tomato sauce on the prepared base then top with the spinach, fetta, tomatoes and Parmesan.
    3. Bake in a preheated oven at 220 degrees C for 20 minutes or until the cheeses start to brown.
