A light soup that is loaded with big chunks of fresh veggies. Potato, carrot, broccoli and zucchini in a mix of chicken and vegetable stock make this soup a delicious starter or light meal.

Serves: 6 

  • 1 onion, sliced
  • 4 stalks celery, sliced
  • 4 carrots, sliced
  • 2 cups (500ml) vegetable stock
  • 2 cups (500ml) chicken stock
  • 3 small potatoes, diced
  • 1 large head broccoli, broken into florets
  • 1 zucchini, diced
  • watercress, to garish
  • salt and pepper, to taste

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Add stocks and diced potatoes to a large saucepan then bring to boil. Simmer for 10 minutes then add onion, celery, carrot, broccoli and zucchini.
  2. Bring back to boil and simmer with lid on for 5 minutes or until just tender. Add a little water if it looks too dry. Add salt and black pepper then serve with a sprig of watercress.
