This wild rice stuffing is perfect with roast chicken, turkey or pork. It includes wild rice, apples, currants and bacon.
Great recipe, my guests loved it. I replaced wild rice with brown rice and doubled the quantity of dried cranberries as I didn't have dried cherries. The amount of stuffing was for a 7kg turkey while I had only the 5kg one. So I froze some for when I make poultry next time. You may want to reduce the amount of ingredients proportionately. It should read: "Cook 1 cup of wild rice in 1 1/2 cup of water AND 1 1/2 cup of broth, for a total of 3 cups of liquid". Other places online say that 1 cup of wild rice should be cooked in 3 cups of water, so that's how we tried it and it was great!
