Prawn and Scallop Noodles

    A fresh and simple stir fry which combines fresh hokkien noodles, prawns and scallops with capsicum and chilli and lime.

    Serves: 2 

    • 1 (250g) packet fresh hokkien noodles
    • 2 teaspoons vegetable oil
    • 1 teaspoon sesame oil
    • 6 medium green prawns, peeled and cleaned
    • 6 white scallops without roe
    • 1 clove garlic, finely chopped
    • 1/4 red capsicum, finely sliced
    • 1/4 green capsicum, finely sliced
    • 4 spring onions, cut into 2cm slices
    • juice of 1 lime
    • 2-3 tablespoons sweet chilli sauce
    • 1/2 bunch fresh coriander

    1. Place the noodles in a bowl, cover with boiling water and let stand for 2 minutes. Drain and keep warm.
    2. Heat a wok, add the vegetable oil and sesame oil, toss in the prawns and stirfry until they change colour, about 2 minutes. Add the scallops, garlic, capsicums and spring onion and stirfry for 30 seconds.
    3. Toss in the noodles and the lime, chilli sauce and coriander. Toss well and serve immediately.
