Place the noodles in a bowl, cover with boiling water and let stand for 2 minutes. Drain and keep warm.
Heat a wok, add the vegetable oil and sesame oil, toss in the prawns and stirfry until they change colour, about 2 minutes. Add the scallops, garlic, capsicums and spring onion and stirfry for 30 seconds.
Toss in the noodles and the lime, chilli sauce and coriander. Toss well and serve immediately.
