Easy Mushroom Fritters

    Lovely healthy mushroom fritters with a Dijon mustard batter. These are delicious when served with corn relish and a green salad.

    Serves: 4 

    • Batter
    • 200g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • black pepper to taste
    • 2 eggs
    • 1/2 cup (125ml) milk
    • 2 teaspoons Dijon mustard
    • 1 small onion, finely sliced
    • 1 kg mushrooms, finely sliced
    • 1 tablespoon chives, chopped

    1. Combine all the batter ingredients and set aside.
    2. Add a little oil to a frying pan and cook the onion until tender. Add the mushrooms and saute until they are wilted down to about half the volume.
    3. Remove the mushrooms and onion from the pan and reduce the remaining liquid until it is thick. Pour the liquid over the mushrooms and add the chives. Mix into the batter.
    4. Reheat the frying pan and add spoonfuls of batter. Cook gently 1-2 minutes a side until crisp and golden.
