Greek Celery Pork

This is a rustic Greek-style meal with very simple ingredients but powerful flavours. Serve with rice or with pita bread.

Serves: 6 

  • 2kg celery, chopped in 3cm lengths
  • 1 1/2 kg boneless pork
  • 2 onions, chopped
  • 1 cup olive oil
  • salt and pepper to taste
  • 1/2 cup lemon juice

  1. Boil the celery for 25 minutes and drain.
  2. Chop the pork into bite-sized pieces, heat the olive oil, and brown the pork and onions. Add a little water and let the pork simmer for 45 minutes.
  3. Add the celery and salt and pepper to taste and cook over low heat, without stirring much, until the water has been absorbed. Add the lemon juice and serve.
