Zucchini Couscous

    This is a great side dish where couscous is sauteed with garlic and mixed vegetables like zucchini and capsicum. Lovely with roast pumpkin.

    Serves: 2 

    • 1 cup couscous
    • 1 clove garlic, sliced
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1 small onion, finely diced
    • 1 small carrot, finely diced
    • 1 small zucchini, finely diced
    • 1/2 red capsicum, finely diced
    • salt and pepper

    Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

    1. Soak the couscous in 150ml cold water for 1/2 hour.
    2. Saute the garlic in the olive oil and butter. Add the vegetables and saute five more minutes. Mix the couscous with the vegetables and cook over gentle heat for 10 minutes. Season to taste.
