Lemon Basil Chicken Stirfry

Here's a great way to use some of the lemon basil in your herb garden. Lemon basil is often used in Laotian and in Thai salads.

Serves: 4 

  • oil for stir frying
  • 500g chicken breast, cut into cubes
  • 1 tablespoon ginger, finely minced
  • 3 cloves garlic, finely minced
  • 1 (425g) tin straw mushrooms, drained
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • white pepper to taste
  • pinch sugar
  • 1 fresh chilli, sliced thinly
  • 40 leaves lemon basil

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Heat wok until hot, add oil and stir fry ginger and garlic until golden. Add chicken and fry until almost cooked.
  2. Add straw mushrooms, oyster sauce, fish sauce, pepper, sugar and chilli. Toss until well combined and chicken is cooked. Toss basil through and remove from heat.
  3. Serve with steamed rice.
