eff Lemon and Lime Jelly with Marinated Raspberries

    A family favourite gone gourmet with a little help from eff juice!

    Serves: 6 

    • 500ml eff Lemon and Lime
    • 6 gold leaf gelatine sheets
    • 200g raspberries
    • Juice of 1 lime
    • 1/2 cup mint leaves, bruised
    • 250ml water
    • 6 tablespoons caster sugar
    • To serve: Rose Persian fairy floss

    1. Place 150ml of the eff Lemon and Lime into a small saucepan and place over a low heat until it begins to just simmer. Remove from the heat.
    2. Soak the gelatine sheets in a small bowl of cold water for 5mins, remove and squeeze out the excess water.
    3. Place into the hot eff Lemon and Lime and whisk until complete melted.
    4. Pour into a jug and allow to cool to room temperature.
    5. Add the remaining eff Lemon and Lime and stir to completely combine.
    6. Pour into small glasses, leaving enough room to serve with the raspberries on top.
    7. Place into the fridge to set for 4 hours or overnight.
    8. To prepare the marinated raspberries, place the water, lime juice, sugar and bruised mint leaves (to bruise place in one hand and clap hands together) into a small saucepan and place over a medium heat.
    9. Bring to a simmer and cook until the mixture reduces 1/3 to a syrup.
    10. Allow to cook and then strain through a fine sieve. Pour over the raspberries.
    11. To serve, top the jelly with a spoonful of the marinated raspberries and the fairy floss
    12. Enjoy!
