Brown the mince in a frying pan or saucepan, add onion, garlic and ginger, if using, and cook until soft. Add soup mix, rice and curry powder and stir to coat mince mix in the curry.
Just cover mince with water and turn heat to a simmer. Place a lid (or tray) over and leave, stirring occasionally so it doesn't stick to pan. Cook until the rice is cooked through and most of the water is adsorbed.
I sometimes add tinned corn or other veg depending on what we have and feel like at the time.
This dish was great. I didn't have a packet of chicken noodle soup so I used a can of cream of chic instead. I used garlic from the jar & didn't add the ginger. I added peas some fresh tomatoes I had left over & mushrooms. I doubled the amount of rice. I would definitely recommend - 28 Aug 2013
