Leftover Turkey Soup

    This is a soup I make with leftover turkey after Christmas each year, I also throw in any other leftovers in there that I find like vegetables.

    Serves: 4 

    • 2 litres chicken stock
    • 1 onion, diced
    • 2 clove garlic, crushed
    • 2 potatoes
    • 3 carrot
    • 3 sticks celery
    • 1 broccoli stalk
    • leftover turkey

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Place the chicken stock in a large saucepan and bring to the boil.
    2. Cut up the vegetables into to about the same size, 1cm cubed. Do the longest cooking first and the shortest cooking last adding each to the saucepan of boiling stock as you go.
    3. Finely dice and add the leftover turkey about 5 minutes before serving so it doesn't break up.
