Miso and Tofu Soup

    This tofu, miso, spring onion and wakame seaweed soup is a great appetiser and easy to make from scratch.

    Serves: 4 

    • 2 teaspoons instant dashi
    • 2 spring onions, sliced on the diagonal
    • 3 tablespoons miso paste
    • 1 tablespoon wakame seaweed, finely chopped
    • 100g silken tofu, cubed
    • 1 litre water

    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Soak wakame for 10 minutes in cold water.
    2. Combine 1 litre water and instant dashi in a saucepan over medium heat. Bring to the boil, then add miso paste and whisk to dissolve. Add drained wakame and simmer for three minutes.
    3. Divide the cubed tofu between four serving bowls. Ladle in the miso soup then sprinkle with spring onion. Serve!


    Some believe miso should not be boiled as it affects the flavour. If you feel this way, bring it to just below a simmer.
