Piadina with Blue Cheese, Figs and Proscuitto

    This is a super easy dinner or even a brunch for when you want something light but yummy. Serves 2 people or 4 if its a snack. I swap out Jarslberg for Mozzarella if I don't have any.

    Serves: 2 

    • 2 flour tortillas, 18-20cm
    • 2 fresh figs, sliced thinly (used dried if you can't get fresh)
    • 6 slices prosciutto
    • 50g light Jarlsberg cheese sliced
    • 25g blue cheese, crumbled

    Preparation:10min  ›  Cook:6min  ›  Ready in:16min 

    1. Lay 1 wrap on chopping board and spread 1/2 the blue cheese evenly over it.
    2. Lay slices of Jarlsberg (use half).
    3. Lay fig slices even over the cheeses, then the prosciutto.
    4. Layer the remaining Jarlsberg over the prosciutto and cover with the other wrap.
    5. Heat a large fry pan with a little oil then lay the wraps in the pan.
    6. Cover and fry for 2-3 minutes on one side. Gently flip and cook another 2-3 minutes.
    7. Remove and cut lengthwise - serve hot.
