Banana, Coconut and Maple Muffins

    Perfect to get rid of old bananas, this sweet treat is a simple yet moist and tasty banana muffin recipe that is popular in my house.

    • Coconut Topping
    • 15g butter
    • 1 tablespoon maple syrup
    • 2/3 cup coconut
    • Muffins
    • 2 cups self raising flour
    • 1/2 teaspoon bicarb soda
    • 1/2 cup brown sugar
    • 1/4 cup maple syrup
    • 2/3 cup mashed banana
    • 2 eggs, lightly whisked
    • 1 cup milk
    • 1/3 cup vegetable oil

    1. Coconut Topping: In a saucepan melt the butter then add the maple syrup and coconut then stir until coconut is well coated and starting to brown.
    2. Muffins: Preheat the oven to 180 degrees C. Grease a 12 hole muffin tray.
    3. Sift the flour and bicarb soda in a large bowl. Stir in the brown sugar, maple syrup, mashed bananas, eggs, milk and oil.
    4. Spoon the batter into the prepared muffin tray, then sprinkle with the coconut topping.
    5. Bake in the preheated oven for 20 minutes.
