Perfect healthy and cold dessert for a hot summer day. Great way to do something different with a watermelon and get rid of the hassle of dealing with the seeds.

Serves: 8 

  • 2kg watermelon
  • 2 cups sugar syrup

Preparation:10min  ›  Extra time:3hours freezing  ›  Ready in:3hours10min 

  1. Lightly blend the watermelon until broken up. Strain through a sieve into a large bowl to remove any seed remnants.
  2. Combine the watermelon juice with the sugar syrup and stir well.
  3. Tip the watermelon mixture into a shallow tray and put in the freezer until just set, about 3 hours.
  4. To serve break up the mixture and place in a chilled glass.
