Flourless Chocolate and Hazelnut Torte

    Although a lot of people make this because they don’t want flour, I just make it because I like the simplicity of the recipe and great taste.

    Makes: 1 cake

    • 1/3 cup cocoa powder
    • 1/3 cup hot water
    • 150g dark chocolate, melted
    • 150g unsalted butter
    • 1 1/3 cups packed brown sugar
    • 1 cup hazelnut meal
    • 4 eggs, separated

    1. Preheat the oven to 180 degrees C. Grease a 20cm round cake tin and line with baking powder.
    2. Combine the cocoa powder and water in a large bowl combining well until smooth. Add melted chocolate, butter, sugar and hazelnut meal, then stir until combined.
    3. Stir in the egg yolks one at a time stirring after each is added.
    4. Whisk the egg whites in a small bowl until soft peaks form, fold this into the chocolate mixture in two batches.
    5. Pour the mixture into the prepared cake tin and bake in the oven for about 90 minutes then remove and cool in the tin.
