Lemon Glazed Cookies

    Serves: 4 

    • 1/4 cup milk
    • 1 teaspoon vinegar
    • 125g butter, softened
    • 3/4 cup sugar
    • 1 egg
    • 1 teaspoon lemon rind
    • 1 3/4 cup plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup icing sugar
    • lemon juice as needed to make glaze

    1. Preheat oven to 180 degrees C.
    2. Mix milk and vinegar in a cup, set aside to sour.
    3. Beat butter, sugar, egg and lemon rind until smooth.
    4. Sift in flour, baking powder and salt. Add milk, mix it all together well.
    5. Put on trays, about the size of a teaspoon. Bake for 12 minutes or until golden.
    6. To make the glaze: mix together 1/2 cup icing sugar and lemon juice until smooth. Spread over the hot cookies and leave to cool.
