Easy Garlic and Basil Pasta

    This is my standard midweek standby that uses a tin of tomatoes as the base and then isn't overly seasoned only using basil and garlic.

    Serves: 2 

    • 2 serve pasta
    • dash of olive oil
    • 2 cloves garlic, crushed or finel diced
    • 1 (400g) tin crushed or diced tomatoes
    • 4 basil leaves, diced
    • salt and pepper, to taste

    1. Put the pasta on to boil as per packet instructions.
    2. Heat a saucepan on medium heat then add the olive oil and garlic and simmer, when the garlic looks like it might start to brown add the tin of tomatoes. Simmer until pasta is ready.
    3. When pasta is ready drain and add to the tomatoe sauce, also add the basil and season to taste. Stir to coat all the pasta then serve.
